A few years ago, I had the opportunity to go to Haiti with the excellent humanitarian group, Naturopaths Without Borders. One of the clinic staff showed me how to make traditional Haitian Soup. When Haitian slaves were under French rule, they were forbidden to eat soup because the French considered it to sophisticated for the palates of slaves. Now, Haitians eat this soup every January 1st in celebration of their independence, which they gained in 1804. |
